Instructions
1-Preheat the oven: Preheat the oven to 450ยฐF and line a baking sheet with parchment paper.
2-Place the mushrooms on the baking sheet: then drizzle with 2 tablespoons extra-virgin olive oil, 1 tablespoon balsamic vinegar, and 1 tablespoon tamari or soy sauce.
3-Sprinkle with pepper, toss to coat evenly, and spread the mushrooms out on the baking sheet.
4-Roast in the oven for 18 to 20 minutes, stirring halfway through, until the mushrooms are tender and browned around the edges.
5-Remove from oven and toss with 1 tablespoon chopped fresh parsley, 1 tablespoon fresh thyme leaves, salt, and additional pepper if desired, then serve.
