Ingredients
2 pounds small yellow and/or red potatoes
2 tablespoons olive oil divided
2 tablespoons butter melted
1 teaspoon kosher salt
1 teaspoon granulated garlic or garlic powder
Β½ teaspoon freshly ground black pepper
Β½ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh Italian parsley divided
Instructions
1-First: follow the directions from the recipe summary: Preheat the oven to 425Β°F and place the potatoes in a pot covered with water. Bring them to a boil and cook until fork-tender, about 15 minutes, then drain them carefully.
2-Next: coat a baking sheet with 1 tablespoon of oil and transfer the hot potatoes using tongs. Use the back of a heavy measuring cup to smash each one until about ΒΌ inch thick, pressing straight down to avoid slipping.
3-Then: drizzle the potatoes with the remaining oil and melted butter, and sprinkle with salt, granulated garlic or garlic powder, and pepper. Add about a teaspoon of parsley for a fresh touch.
4-Now: roast them for 30 minutes until browned and crispy on the edges. After that, remove from the oven, top with the Parmesan cheese, and roast for an additional 5 minutes to melt the cheese perfectly. Finally, sprinkle generously with the rest of the parsley and serve warm for the best flavor.
