1 teaspoon ground cinnamon

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1 cup (230g) mashed bananas (about 3 medium or 2 large ripe bananas)

1/2 cup (170g) honey or pure maple syrup

1/2 cup (120g) plain Greek yogurt or regular yogurt

2 tablespoons (28g) coconut oil, melted and slightly cooled

1 large egg, at room temperature

1/3 cup (80ml) unsweetened almond milk or preferred milk

1/2 cup (125g) creamy peanut butter (natural or processed, smooth)

2 teaspoons pure vanilla extract

1/2 cup (113g) mini chocolate chips

1/4 cup (63g) creamy peanut butter, melted for drizzling

Instructions

1-First, preheat your oven to 350ยฐF (175ยฐC) and line or grease a muffin tin to get ready for baking.

2-In a large bowl, mash the ripe bananas until smooth, then stir in the peanut butter, honey or maple syrup, Greek yogurt, coconut oil, egg, almond milk, and vanilla extract until everything blends well.

3-Next, in another bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt to mix the dry ingredients evenly.

4-Gradually fold the dry mixture into the wet ingredients, stirring gently to keep the batter light and airy overmixing can make the muffins tough.

5-Once combined, spoon the batter into the muffin tin, filling each cup about two-thirds full for even rising.

6-Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean, then let them cool for a few minutes before enjoying.
