Ingredients

– 2 cups (250 g) all-purpose flour

– 1 teaspoon baking soda

– Β½ teaspoon salt

– 6 Tablespoons (85 g) unsalted butter, melted and slightly cooled

– Β½ cup (130 g) creamy no-stir peanut butter

– ΒΎ cup (150 g) packed light brown sugar

– ΒΌ cup (50 g) granulated sugar

– 1 teaspoon vanilla extract

– 1 large egg, room temperature

– ΒΎ cup chocolate chips, M&M’s or nuts (optional)

– 1-2 Tablespoons milk, if needed

Instructions

1-Preheat oven: Preheat oven to 350Β° F and line an 8Γ—8-inch metal baking pan with parchment paper for easy removal.

2-In a medium bowl: whisk together 2 cups (250 g) all-purpose flour, 1 teaspoon baking soda, and Β½ teaspoon salt until well combined.

3-In a stand mixer or with a hand mixer: combine 6 Tablespoons (85 g) melted and slightly cooled unsalted butter with Β½ cup (130 g) creamy no-stir peanut butter until smooth. Add ΒΎ cup (150 g) packed light brown sugar and ΒΌ cup (50 g) granulated sugar, mixing until well blended, then mix in 1 teaspoon vanilla extract and 1 large egg.

4-Slowly add the dry ingredients to the wet mixture: and stir just until combined. The dough should be soft and slightly crumbly; fold in ΒΎ cup chocolate chips, M&M’s, or nuts if desired by hand.

5-Transfer the dough to the prepared pan: and press it down evenly for uniform baking.

6-Bake: for 20 to 22 minutes, watching closely to avoid over-baking for that perfect chewy center.

7-Cool in the pan: for 10 minutes, then move to a cooling rack until completely cool before cutting into bars and serving.
