1 and 1/2 cups (190g) All-purpose flour

3 Large eggs
3/4 cup (180g) Plain nonfat Greek yogurt
1 cup (200g) Light brown sugar
1/2 cup (120ml) Vegetable or canola oil
1/4 cup (60ml) Freshly squeezed grapefruit juice (strained)
1 and 1/2 tablespoons Grapefruit zest (only outer colored part)
1 teaspoon Pure vanilla extract
Seeds scraped from 1/2 of a vanilla bean
1 cup (120g) Confectionersโ sugar (sifted)
2 tablespoons (30ml) Freshly squeezed grapefruit juice (strained)
1/4 teaspoon Pure vanilla extract
Instructions
1-In a large bowl, whisk together the flour (190g), baking powder (1.5 tsp), and salt (0.5 tsp).
2-In a medium bowl, whisk 3 large eggs and mix in the yogurt (180g), brown sugar (200g), oil (120ml), grapefruit juice (60ml), grapefruit zest (1.5 tbsp), vanilla extract (1 tsp), and vanilla bean seeds.
3-Combine the wet and dry ingredients gently until just mixed; donโt overmix to keep the cake light and fluffy.
4-Pour the batter into the prepared loaf pan.
5-Bake for 45-50 minutes, or until a toothpick comes out clean; cover with foil if the top browns too quickly.
6-Cool the cake completely on a wire rack.
7-Prepare the glaze by whisking together confectionersโ sugar (120g), grapefruit juice (30ml), and vanilla extract (0.25 tsp) until smooth.
8-Drizzle the glaze over the cooled cake and slice to serve.
