Ingredients

– 1 1/4 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon pumpkin spice

– 1/2 teaspoon cinnamon

– 1/4 teaspoon nutmeg

– 1/4 teaspoon salt

– 1/2 cup unsalted butter (room temperature)

– 3/4 cup granulated sugar

– 3/4 cup packed brown sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 1 cup pumpkin puree (not pumpkin pie filling)

– 3 cups old-fashioned oats

– 1 1/2 cups butterscotch chips

Instructions

1-Preheat oven to 375ยฐF. Line two baking sheets with parchment paper or silicone mats to keep things neat and ensure your cookies bake evenly.

2-In a small bowl, whisk together 1 1/4 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon pumpkin spice, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt.

3-In another bowl, beat 1/2 cup unsalted butter (room temperature) with 3/4 cup granulated sugar and 3/4 cup packed brown sugar until smooth and creamy this step makes the cookies extra delicious!

4-Add 1 large egg and 1 teaspoon vanilla extract to the butter mixture, then mix in 1 cup pumpkin puree until everything is well combined.

5-Gradually add the flour mixture to the wet ingredients and stir until fully mixed.

6-Stir in 3 cups old-fashioned oats and 1 1/2 cups butterscotch chips to add that wonderful texture and flavor.

7-Drop dough by tablespoonfuls onto the prepared baking sheets.

8-Bake for 10 to 12 minutes, or until the cookies are set and golden around the edges.

9-Let the cookies cool on the baking sheets for 2 minutes before transferring to wire racks to cool completely this helps them stay nice and chewy.
