Ingredients

– 1 pie crust (frozen or homemade)

– 1/2 pound thin bacon strips chopped into 1/2 inch pieces

– 1/2 cup diced onion

– 1 cup shredded cheese (sharp white cheddar or Gruyere)

– 1 3/4 cups half and half (or equal parts whole milk and heavy cream)

– 4 large eggs

– 1/2 teaspoon kosher salt

– 1/4 teaspoon finely ground black pepper

– 1/4 teaspoon smoked paprika

– 1/8 teaspoon ground nutmeg

– 1 tablespoon chopped parsley or chives

– 1 egg white for brushing inside prebaked crust

Instructions

1-Prepare the crust: Roll out to 12 inches, fit into a tart pan or 9-inch deep pie dish, and freeze for 30 minutes.

2-Blind bake the crust: Preheat oven to 350หšF. Prick crust, line with parchment or foil and weights, bake 35-40 minutes until light golden. Remove weights and parchment, then brush inside with egg white.

3-Cook filling components: Cook bacon until crisp. Remove bacon, then cook diced onions in the bacon fat until caramelized. Discard or save excess fat.

4-Make custard base: Whisk eggs, then whisk in half and half, salt, pepper, smoked paprika, and nutmeg until combined.

5-Assemble: Stir cheese, cooked bacon, and caramelized onions into the custard. Pour mixture into the prebaked crust.

6-Bake: Bake at 350หšF for about 50 minutes until a knife inserted near the center comes out clean and the center has a slight jiggle.

7-Rest and Serve: Cool 10-15 minutes before serving. Garnish with parsley or chives if desired.
