– 1/2 cup Thousand Island dressing

– 2 Tbsp. grainy mustard

– 1 Tbsp. caraway seeds, toasted

– 1/2 tsp. kosher salt

– 1/2 tsp. black pepper

– 12 oz. Swiss cheese, grated, divided (8 oz. mixed into the dip and 4 oz. for topping)

– 1/2 lb. cooked corned beef or pastrami, roughly chopped

– 1 cup sauerkraut, drained

– 3/4 cup sour pickles, roughly chopped

– Parsley, finely chopped (amount as needed for garnish)

Instructions

Getting started with this Reuben dip is straightforward, and weโ€™ll walk through each step to make it simple for beginners. First, gather all your ingredients to ensure smooth sailing this includes chopping the corned beef and draining the sauerkraut. Preheat your oven to 375ยฐF and line two baking sheets with parchment paper for the chips.

Next, cut the bread slices into triangles and spread them on the baking sheets. Brush both sides with melted butter and season with salt and pepper, then bake for 8 to 10 minutes until crisp. Cool them on wire racks while you prepare the dip mixture.

1-Coat a 1-quart baking dish with nonstick cooking spray.

2-In a medium bowl, stir together the cream cheese, Thousand Island dressing, grainy mustard, toasted caraway seeds, kosher salt, and black pepper.
