1 tablespoon extra virgin olive oil

3 tablespoons liquid honey

1/4 cup chopped salted pistachios

2 tablespoons minced fresh basil

Ricotta cheese for base for creaminess

Almond flour (1/4 cup)

Instructions

1-Gather and Mix the Base: First, in a food processor, combine 2 cups (475g) full fat fresh ricotta cheese, juice of half a lemon, zest from half the lemon, 1/4 teaspoon salt, a pinch of ground black pepper, and 1 tablespoon extra virgin olive oil. Blend on high speed until smooth and creamy, about 1 to 2 minutes, then spread it in a shallow serving bowl.

2-Gather and Mix the Base: Next, drizzle 3 tablespoons liquid honey over the ricotta mixture.

3-Add Toppings and Serve: Top with 1/4 cup chopped salted pistachios, 2 tablespoons minced fresh basil, and zest from the remaining lemon half for that fresh burst. Finally, serve with crackers, toasted baguette slices, pita chips, or warm focaccia bread to make it a complete appetizer.
