Ingredients

– 1 pound of brown, white, cremini, or portobello mushrooms

– 2 tablespoons of olive oil

– 2 tablespoons of butter

– 1 tablespoon of soy sauce

– 2 cloves of minced garlic

– 1 sprig of fresh thyme (or a pinch of dried thyme)

– ΒΌ cup of white wine (optional)

– Salt and pepper to taste

– Fresh chopped chives (optional, for garnish)

Instructions

1-Wipe mushrooms clean with a damp paper towel or brush, avoiding water to keep them from getting soggy. Slice into Β½-inch thick pieces.

2-Heat 2 tablespoons butter and 2 tablespoons olive oil in a large pan over medium-high heat.

3-Just before adding to the pan, toss mushroom slices quickly with 1 tablespoon soy sauce.

4-Add mushrooms to the hot pan in a single layer. Cook without stirring for 4-5 minutes to brown nicely. Avoid overcrowding for best caramelization.

5-If using, pour in ΒΌ cup white wine and let it evaporate, bumping up the heat if needed.

6-Stir in 2 cloves minced garlic and 1 sprig fresh thyme (or pinch dried). Cook and stir occasionally for another 3-4 minutes until tender.

7-Season with salt and pepper to taste. Garnish with fresh chopped chives if you like.

8-Remove from heat and serve hot alongside your meal.
