Ingredients
– 1 pound of brown, white, cremini, or portobello mushrooms
– 2 tablespoons of olive oil
– 2 tablespoons of butter
– 1 tablespoon of soy sauce
– 2 cloves of minced garlic
– 1 sprig of fresh thyme (or a pinch of dried thyme)
– ΒΌ cup of white wine (optional)
– Salt and pepper to taste
– Fresh chopped chives (optional, for garnish)

𧽠Wipe mushrooms with a damp towel instead of washing to prevent sogginess and ensure better browning
π³ Use both butter and olive oil – butter for flavor and olive oil for higher smoke point and better caramelization
π₯ Avoid overcrowding the pan to ensure mushrooms brown properly rather than steam – cook in batches if necessary
