Ingredients

– 2 medium yellow onions, sliced

– 26 ounces frozen meatballs (beef, chicken, or pork, plain flavor recommended)

– 2 cups low-sodium beef broth

– 1 ounce brown gravy mix (can be substituted with a can of gravy)

– 2 teaspoons minced garlic

– 1 teaspoon black pepper

– 1 teaspoon dried thyme (or Italian seasoning, oregano, basil, or omit)

– 1 tablespoon white wine vinegar (can be substituted with red wine vinegar or apple cider vinegar)

– ΒΌ cup water

– 2 tablespoons cornstarch

– 1Β½ cups grated Gruyere cheese (or Provolone, Fontina, mozzarella, or preferred cheese)

Instructions

1-Place the sliced onions at the bottom of a 6-quart slow cooker. Add the frozen meatballs on top of the onions.

2-In a medium bowl, whisk together 2 cups beef broth, 1 ounce brown gravy mix, 2 teaspoons minced garlic, 1 teaspoon black pepper, 1 teaspoon dried thyme, and 1 tablespoon white wine vinegar. Pour this mixture over the meatballs.

3-Cover and cook on high for 2Β½ to 3Β½ hours or on low for 5 to 6 hours.

4-In a small bowl, mix 2 tablespoons cornstarch with ΒΌ cup water to create a slurry. Add this to the slow cooker and stir well. Top with 1Β½ cups grated cheese and cook for an additional 10 minutes or until the cheese melts and the sauce thickens.

5-Serve the meatballs over rice, mashed potatoes, noodles, or your preferred side dish.
