Ingredients
– 700g to 1.2kg small to medium potatoes (12-14 small or 6-8 medium)
– 1 tablespoon salt for boiling
– 30g unsalted butter, melted
– 1 tablespoon olive oil
– 3/4 teaspoon salt for sprinkling
– 1/4 teaspoon black pepper
– Finely chopped parsley for optional garnish
Instructions
1-Boil the potatoes in salted water until soft, about 20-25 minutes for small or 30 minutes for medium.
2-Preheat the oven to 200Β°C (390Β°F).
3-Drain and steam dry in a colander for 5 minutes.
4-Gently smash the potatoes on a tray with a fork or masher.
5-Steam dry on the tray for an additional 5 minutes.
6-Drizzle with melted butter and olive oil, then sprinkle with salt and pepper.
7-Bake for 45 to 55 minutes until deep golden and crispy; donβt flip them.
8-Serve hot with optional parsley garnish.
