– 1 Tablespoon unsalted butter, melted and slightly cooled

– 3 and 3/4 to 4 cups all-purpose flour, plus more for hands and work surface

– Coarse salt for topping

– 1/2 cup baking soda for baking soda bath

– 9 cups water for baking soda bath

– Optional for serving: mustard or your favorite dip

Instructions

1-First Steps: Mixing and Kneading: Whisk 1 and 1/2 cups warm water (around 100ยฐF or 38ยฐC), 2 and 1/4 teaspoons instant or active dry yeast, and 1 Tablespoon brown sugar or granulated sugar in a bowl, then let it sit for 5 minutes until foamy. Add 1 teaspoon salt, 1 Tablespoon melted and slightly cooled unsalted butter, and 3 cups of the all-purpose flour. Mix on low speed for 1 minute, scrape the sides, then add 3/4 cup more all-purpose flour and mix until the dough pulls away from the bowl.

2-First Steps: Mixing and Kneading: If the dough is sticky, add more all-purpose flour as needed. Knead the dough using a mixer with a dough hook or by hand for 5 minutes until it is soft and slightly tacky; it should pass the windowpane test or bounce back when poked.

3-Rising and Baking Process: Cover the dough and let it rest for 10-30 minutes while preparing the baking soda bath by boiling 1/2 cup baking soda in 9 cups water. Preheat the oven to 400ยฐF and line baking sheets with parchment or silicone mats. Divide the dough into 6 equal pieces, roll each into 20-inch ropes, and cut into 1.5 to 2-inch pieces to form bites.

4-Rising and Baking Process: If the dough resists rolling, let it rest for 10 minutes. Boil 8-10 bites at a time in the baking soda bath for 10-15 seconds, drain well, and transfer to the baking sheets. Sprinkle with coarse salt while the dough is still wet for a salty version.
