1 tablespoon olive oil (butter can be used as a substitute)

1 1/2 cups yellow onion (about 1 medium onion)

1 1/4 cups celery (about 3 ribs)

1 teaspoon garlic (about 1 clove)

4 cups unsalted chicken broth

4 cups water

1 (16 oz) bag dried split peas, picked over and rinsed

2 bay leaves

1 1/2 teaspoons fresh thyme or 1/2 teaspoon dried thyme

Salt and pepper to taste

1 1/2 pounds meaty ham bone or ham shanks

1 cup carrots, diced

Fresh parsley for garnish (optional)

Instructions

1-Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add 1 1/2 cups yellow onion and 1 1/4 cups celery, then sautรฉ for 3 minutes until they soften.

2-Add 1 teaspoon garlic and sautรฉ for 1 more minute to bring out its aroma.

3-Pour in 4 cups unsalted chicken broth and 4 cups water. Stir in 1 (16 oz) bag dried split peas, 2 bay leaves, and 1 1/2 teaspoons fresh thyme. Season lightly with salt and pepper.

4-Nestle in 1 1/2 pounds meaty ham bone. Bring the mixture to a boil, then reduce to low heat, cover, and simmer for 60 to 80 minutes. Stir occasionally until the peas and ham are tender.

5-Remove the ham bone, let it rest for 10 minutes, then shred or dice the meat.

6-Add 1 cup diced carrots to the soup, cover, and simmer for another 30 minutes until the peas break down.

7-Stir the shredded ham back in, adjust seasoning with salt as needed, and serve warm, garnished with fresh parsley if desired.
