Ingredients

– 2 cups of flour

– 3 tablespoons of sugar

– 1 tablespoon of baking powder

– 1/2 teaspoon of salt

– 1/2 cup (8 tablespoons or 1 stick) of chilled and diced unsalted butter

– 1 cup of chopped fresh strawberries

– 1 large egg

– 1/2 cup of chilled heavy whipping cream

– 1 tablespoon of milk for brushing

– 1/2 tablespoon of coarse sugar for sprinkling

– 2/3 cup of powdered sugar for glaze

– 1 tablespoon of milk for glaze

Instructions

1-Preheat and Prep: Heat oven to 400หšF. Line a baking sheet with parchment.

2-Mix Dry Ingredients: Sift 2 cups flour, 3 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt into a large bowl.

3-Add Butter: Cut in 1/2 cup chilled diced unsalted butter until coarse crumbs form. Gently toss in 1 cup chopped fresh strawberries.

4-Combine Wet: Beat 1 large egg and stir in 1/2 cup chilled heavy whipping cream. Add to flour mixture, stir just until moistened. Avoid over-mixing for flaky results.

5-Shape Dough: Turn onto floured parchment. Form a 3/4-inch-thick circle. Cut into 12 wedges, separate by 1/2 inch.

6-Brush and Bake: Brush with 1 tablespoon milk, sprinkle 1/2 tablespoon coarse sugar. Bake 15-16 minutes until golden and puffed.

7-Glaze: Mix 2/3 cup powdered sugar with 1 tablespoon milk until smooth. Drizzle over warm or room temperature scones.
