Ingredients

– 1 lb lean ground beef

– 2 tablespoons olive oil, divided

– 1 small yellow onion, chopped (about 1 cup)

– 1 cup chopped red bell pepper (a little over half of a medium pepper)

– 1 cup chopped green bell pepper

– 2 cloves garlic, minced

– 2 (14.5 oz) cans diced tomatoes

– 1 (15 oz) can tomato sauce

– 1 (14.5 oz) can beef broth

– 2 1/2 tablespoons parsley

– 1/2 teaspoon basil

– 1/2 teaspoon oregano

– 1 cup uncooked long grain white or brown rice

– Cheddar or mozzarella cheese for serving (optional)

– Salt and pepper to taste

Instructions

1-In a large pot, heat 1 tablespoon olive oil over medium heat. Add ground beef, season with salt and pepper, and cook while breaking it up until browned. Drain excess fat and set beef aside.

2-Heat the remaining 1 tablespoon olive oil in the pot. Add onions, red bell pepper, and green bell pepper. Sautรฉ for 3 minutes, then add garlic and sautรฉ for 30 seconds more.

3-Add diced tomatoes, tomato sauce, beef broth, parsley, basil, oregano, and the cooked beef. Season with salt and pepper to taste.

4-Bring to a light boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.

5-Cook rice according to package directions while the soup simmers.

6-Stir the desired amount of cooked rice into the soup before serving.

7-Serve warm, topped with optional cheese and garnish with fresh parsley if desired.
