๐Ÿ  Loaded Sweet Potato Skins offer a comforting, flavorful appetizer packed with fiber, vitamins, and protein.
๐Ÿง€ Combining crispy bacon, melted cheeses, and creamy sweet potato filling, this recipe is perfect for easy meals and sharing.

  • Total Time: 1 hour 25 minutes
  • Yield: 8 loaded sweet potato skins 1x

Ingredients

Scale

4 medium sweet potatoes

1 tablespoon olive oil

1/4 cup milk (buttermilk, whole milk, or half-and-half recommended)

1/4 teaspoon salt

Ground black pepper to taste

1 cup shredded cheese (use half sharp cheddar and half mozzarella for best flavor)

4 strips bacon, cooked until crispy and crumbled

sour cream for serving

chopped chives for serving

Instructions

1-First, preheat your oven to 400ยฐF (204ยฐC). Wash and dry the sweet potatoes, then pierce each one several times with a fork to let steam escape during baking. This simple step helps them cook evenly and prevents any bursting in the oven.

2-Next, rub the sweet potatoes with olive oil, salt, and pepper for extra flavor and crispiness. Place them on a baking sheet and roast for 40-50 minutes until soft. Once done, let them cool slightly before slicing lengthwise and scooping out the flesh, leaving a thin layer inside the skins.

3-After that, reduce the oven to 375ยฐF (191ยฐC). Arrange the skins face up on the baking sheet, drizzle with olive oil, and bake for 10 minutes to crisp them up. Meanwhile, mash the scooped-out flesh with milk, salt, and pepper until creamy, then fill the skins with this mixture and top with shredded cheese.

4-Finally, bake for another 15 minutes until the cheese melts. Remove from the oven, sprinkle with crispy bacon, and serve with sour cream and chopped chives for a finishing touch. For added variety, try mixing in cooked spinach to the filling or substituting regular potatoes, as these tweaks keep things fresh and exciting.
