Instructions

1-Preheat oven and prepare sweet potatoes with seasoning: Getting started with this recipe is straightforward and fun. To prepare, preheat the oven to 400°F (200°C). First, mix the spices in a small bowl and toss the sweet potato cubes with vegetable oil and half the seasoning mix for even coating.

2-Bake until tender, about 15-20 minutes: Bake the sweet potatoes for 15-20 minutes until they are tender, flipping once for the best results.

3-Cook ground beef and mix in beans and corn: While the potatoes bake, cook the ground beef over medium-high heat for 5-7 minutes, then drain excess fat, leaving about one tablespoon in the pan to keep things flavorful. Next, add the black beans, corn, and remaining seasoning to the skillet and heat through until everything is warm and well combined.
