Ingredients
1 1/2 cups uncooked long grain white rice
2 cups low sodium chicken or vegetable stock
1 1/2 tablespoons light soy sauce
1 tablespoon Chinese cooking wine (or a non-alcoholic substitute of 1/2 tablespoon extra soy sauce plus 2 tablespoons unsalted butter with sesame oil)
2 cloves minced garlic
2 cups frozen diced vegetables (such as a carrot, pea, and corn mix)
1/4 teaspoon white pepper (or black pepper)
1 1/4 cups (180g) chopped uncooked bacon or ham
1 tablespoon sesame oil for finishing
1/2 cup finely sliced green onion (about 2–3 stems) for finishing
Instructions
1-Getting started: with this tray bake egg fried rice is as simple as preheating your oven, and soon youβll have a hot meal ready. First, set your oven to 200Β°C (390Β°F) or 180Β°C fan to ensure even cooking right from the start. In a baking dish about 22 x 32 cm, combine the uncooked long grain white rice with the stock, soy sauce, Chinese cooking wine, minced garlic, frozen vegetables, and white pepper, stirring everything well to spread it evenly.
2-Next, scatter the chopped bacon or ham on top of the mixture for that crispy finish. Cover the dish with foil and bake for 40 minutes, then remove the foil and bake uncovered for another 15 minutes to brown the top and let the liquid absorb fully. The rice might look a bit wet at this stage, but donβt worry it will perfect itself during the resting time.
3-After baking, take the dish out of the oven, cover it loosely with foil, and let it rest for 10 minutes. This step helps the flavors meld and the texture firm up. Finally, stir in the sesame oil and sliced green onion, then fluff the rice gently before serving to keep it light and airy.
