Instructions
1-First, preheat your oven to 325Β°F and line the bottom of a 9-inch springform pan with parchment paper. This sets the stage for a perfect bake. Mix the crust ingredients together and press them firmly into the pan for a solid base.
2-Making the Filling: Beat the cream cheese until itβs fluffy, then add sugar and mix well. Incorporate the ube jam and sour cream until smooth, followed by vanilla and ube extracts. Taste and adjust sugar if needed, then add eggs one at a time, beating just until combined. This keeps your filling light and prevents cracks.
3-Baking and Cooling: Pour the batter into the crust and tap gently to remove air bubbles. Bake at 325Β°F for 30 minutes, then lower to 300Β°F for another 30 minutes until edges set and the center is slightly wobbly. Turn off the oven, crack the door, and let it cool inside for an hour before chilling in the fridge for 6-8 hours.
4-For the whipped cream, beat the solid part of chilled coconut cream with sugar and vanilla until stiff peaks form. Top your chilled ube cheesecake and serve! The total time is about 9 hours 15 minutes, including prep, cook, and chill time.
