Instructions
1-First, heat the olive oil in a large pot over medium heat. Add the chopped bacon or pancetta and cook until itβs crispy, which takes about 5 minutes. This step builds a flavorful base for your white wine sauce, so take your time.
2-Next, brown the chicken pieces. Season them with salt and pepper, then place them in the pot skin-side down. Cook for 5-7 minutes per side until golden. Set the chicken aside while you move on to the vegetables.
