πŸ— This Coq au Vin Blanc recipe offers a rich and comforting chicken dish simmered slowly in flavorful white wine sauce.
🍷 Perfect for special dinners or cozy meals, it combines tender chicken and earthy mushrooms with luscious cream for an elegant touch.

  • Total Time: 1 hour 5 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale

1 tablespoon olive oil

1 finely chopped onion

4 to 5 strips of chopped bacon or pancetta

4 thinly sliced garlic cloves

8 bone-in chicken pieces (thighs and legs)

250 grams (2 cups) cremini mushrooms (whole or halved)

500 milliliters (2β…“ cups) dry white wine

250 milliliters (1 cup) double or whipping cream

Salt and pepper to taste

A handful of chopped flat leaf parsley

Instructions

1-First, heat the olive oil in a large pot over medium heat. Add the chopped bacon or pancetta and cook until it’s crispy, which takes about 5 minutes. This step builds a flavorful base for your white wine sauce, so take your time.

2-Next, brown the chicken pieces. Season them with salt and pepper, then place them in the pot skin-side down. Cook for 5-7 minutes per side until golden. Set the chicken aside while you move on to the vegetables.

3-After browning, sautΓ© the onions, garlic, and mushrooms in the same pot for about 5 minutes until they soften. This adds layers to your white wine sauce. For a sweet touch, try pairing this with something like a berry crisp dessert from our collection.

4-Pour in the dry white wine and bring it to a simmer, scraping up any bits from the bottom of the pot. Add the chicken back in, along with the cream, and let everything cook together for 30-40 minutes. Finally, stir in the parsley and adjust seasoning as needed.
