Neutral oil for frying

Instructions

1-Whisk warm milk, 1 tablespoon sugar, and yeast in a medium bowl; let sit 5 7 minutes until frothy.

2-In a large bowl, mix flour, salt, remaining 1 tablespoon sugar, and lemon zest. Create a well in the center.

3-Add whisked eggs to the well and mix as much as possible.

4-Pour in the milk-yeast mixture and stir until combined.

5-Cover with plastic wrap and proof in a warm place for about 2 hours until doubled.

6-Heat oil in a pot to 350ยฐF.

7-Use two spoons to drop 1 2 tablespoon portions of batter into the hot oil.

8-Fry for about 45 seconds per side, flipping once, until golden brown.

9-Drain fried zeppoles on a rack to remove excess oil.

10-Immediately dust with powdered sugar, cinnamon, or sugar. Serve warm.
