– 2 strips bacon
– 1 yellow onion
– 5 large eggs
– 1 cup shredded cheddar cheese
– 1 cup self-rising flour (or 1 cup flour plus 2 teaspoons baking powder)
– 1/4 cup olive oil
– 3/4 pound zucchini (about 2 cups shredded)
– Salt and pepper to taste
Instructions
1-Preheat the oven to 350ΒΊF (175ΒΊC) and line an 11Γ7-inch baking dish with parchment paper.
2-Finely dice the onion and chop the bacon. In a frying pan over medium heat, melt the butter and cook the bacon and onion until the onion softens and the bacon becomes golden. Set aside to cool.
3-Grate the zucchini into a colander, sprinkle with salt, and let it sit to release excess moisture.
4-In a large bowl, mix together the bacon, onion, eggs, cheese, flour, and olive oil.
5-Squeeze out the moisture from the zucchini and add it into the mixture; season with salt and pepper.
6-Pour the batter into the prepared baking dish and bake for 35 to 40 minutes until cooked through and firm. Allow it to cool before cutting into slices.
